Cauliflower Ka Salan:
Cauliflower Ka Salan is a rich and tangy curry featuring cauliflower florets in a gravy made from roasted peanuts, sesame seeds, coconut, and a blend of aromatic spices.
Ingredients:
Cauliflower, peanuts, White sesame seeds, onions, turmeric powder, salt, vegetable oil, cumin seeds, coriander seeds, Fenugreek seeds, desiccated coconut, tamarind juice, red chilli powder, mustard seeds, hing, ginger, and garlic paste.
Channa Ki Dal:
Made from split chickpeas cooked with aromatic spices, onions, tomatoes, and finished with a flavorful tempering (tarka). It has a slightly nutty taste and a thick, satisfying texture, making it a popular everyday meal served with rice or flatbreads.
Ingredients:
Chana Dal (split chickpeas), cooking oil, Onion, Ginger-garlic paste, Tomato, Green chili, Cumin seeds, Turmeric powder, Red chili powder, Coriander powder, Garam masala, Salt, Water, Garlic, Dried red chilies, Asafoetida.
Agra ka baingan bharwa (Aubergine curry):
Tender aubergines cooked in a spiced gravy. The aubergines are gently simmered with chickpeas in a sauce of onions, tomatoes, garlic, and aromatic spices such as garam masala, turmeric, and chilli powder. A touch of coconut milk adds creaminess, while subtle sweetness balances the heat, resulting in a hearty, mildly spiced curry with a smooth and comforting texture.

Aubergine, chickpeas, onion, tomato, tomato puree, garlic, sugar, salt, vegetable oil, garam masala, coconut milk, chilli powder, turmeric powder.

One-pot rice dish made by cooking basmati rice with vegetables like peas, carrots, potatoes and aromatic spices. It is mildly spiced, comforting, and often prepared as a quick, wholesome meal, especially in households where a simple yet flavorful dish is preferred.
